low-carb vegetarian recipies?

Question:

My question, I need more vegetarian recipies – and can’t seem to find any. Does anyone know of any good recipies. I do consume eggs and milk and other dairy products, just no fish, poultry or other meats.

Eat more nuts. Here’s a sample recipe: OK try this. 1 cup almond butter 1 cup sliced raw almonds 1 cup pure coconut milk 2 cups shredded unsweetened coconut 3 eggs beat and pour in muffin cups.  Cook at 400 for 15 minutes. Kathleen

I’ve been told that I have PCO, and insulin resistance (possibbly hyperinsulinemia).Anyway, I have been able to modify my diet a little bit to include more of the high protein vegetarian foods, and therefore eliminate a lot of the starches and carbohydrates I had in my diet – and so far it seems to be working as I’ve already lost a bit of weight (don’t know exact numbers yet). My question, I need more vegetarian recipies – and can’t seem to find any. Does anyone know of any good recipies. Christi I would suggest you post this same question in alt.support.diet.lo-carb…. There are some wonderful folks there who would love to help you…. I personally just started the Zone, so am not experienced enough to suggest recipes… another good source for your would be Zone Perfect Recipes in Minutes by Dr. Barry Sears…. he has some good suggestions for vegetarians trying to cut out starches, etc….
