Cornfields.  lol Actually, Bloomington is just a couple hours from Chicago which is much better than my situation… Omaha is 5 to the west, Kansas City 5 hours south, Minneapolis is 5 hours north and Chicago is 5 hours east. I am, however, only a few minutes away from a major medical center.  It could be worse. — Marilyn

[Somewhat late response:]   I have never been a chocoholic, but since my diagnosis (and diet, etc.), I have become somewhat of a chocoholic. What I have found that my ‘cravings’ can be satisfied by *small* amounts of chocolate, especially when it is *part of* a snack, i.e. for example a muesli-bar with chocolate chips in it, or (‘worse’) a chocolate chip cookie. Also I have learned to ’suck’ chocolate, instead of eating/chewing it, that way often a single small piece is enough.   Also, as another poster mentioned, you may be ‘craving’ for the *fat* in the chololate, so if you diet is somewhat unbalanced towards too litlle fat, then maybe you can get the ‘missing’ fat in another (than chocolate), and hopefully ‘healthier’ way.   I hope this helps. I have been doing quite well on controlling my diet and carbs and bg readings all day. But come about 9:00PM, I get a terrible case of the ”munchies”. I have tried having a nourishing type snack such as peanut butter and crackers or cheese, nuts, and other things that won’t make the bg sky rocket, but I still can’t get past the chocolate cravings. I try to resist, but find myself eating a fudge bar or chocolate ice cream or some other kind of chocolate. Is there any help for a 58 years old chocoholic with t-2 diabetes?????

try a really good dark or bitter chocolate  i like the Dove dark promises  just under 5g carb per piece with 2 g fiber  individualy wrapped.  since they are high fat i also use them at night to help with my late shot of NPH and dawn phenomona now added Avandia " The greatest pleasure in life is doing what people say you cannot do"

Almond flour is in supermarkets in Australia, nice to coat fish with, or you can get finely ground almonds for the same purpose, they are with the packaged nuts for cooking purposes here, near cake mixes and toppings etc. Xanthan I don’t know, maybe a health food store.

What city are you in? Lurline Those recipes sound wonderful.  I want to try them, but where would I look for Almond flour and xanthan gum? Yep. You can make chocolate mousse using sugar free pudding and whipping cream. It’s soooo rich you can only eat a bit.  I usually split the box into 6 -8 small servings.  Cream is lower in carbs than milk and much lower than fat free milk. Also, here’s some low carb recipes: Peanut Butter Chocolate Fudge Ingredients: * 8 oz cream cheese * 6 pkt of Splenda or other sweetener * 1 oz unsweetened baker’s chocolate * 1/4 cup heavy cream * 1 tsp peanut butter Melt the cream cheese and peanut butter in microwave for approx 2 minutes [stopping and stirring at 1 minute intervals.} Melt chocolate in separate bowl until creamy. Combine chocolate with cream cheese mixture and whisk in sweetener and cream. Pour into buttered { or Pam’ed} glass pan and chill at least 4 hours. Cut into squares and enjoy. { This recipe yields a more "gooey" fudge that traditional fudge, but if you want more uniform squares, place pan in freezer for 30 minutes before cutting.} Cut into 16 pieces – 2.5 carbs per piece. CHOCOLATE-WALNUT BROWNIES 1/2 cup butter, softened 1 1/2 cups Splenda 2 eggs 1 teaspoon vanilla 2 tablespoons cream (or water or coffee) 1 cup almond flour 1 teaspoon xanthan gum Pinch salt 1 teaspoon baking soda 4 ounces unsweetened chocolate, melted 1/4 cup chopped walnuts Preheat oven to 350 degrees.  Grease an 8×8 square pan. In a mixer, cream together the butter and Splenda.  Add the eggs, one at a time, incorporating well.  Add the vanilla and cream, blending well. In a small bowl, mix together the almond flour, xantham gum, salt and baking soda.  Add the almond flour mixture to the butter mixture, alternating with the chocolate.  Fold in the nuts.  This makes a very stiff batter – almost dough-like. Spread the batter in the greased pan, and baking for about 12-13 minutes, or until a knife inserted comes out clean.  Cut into 16 1-inch squares. Makes 16 servings, 3.38 carbs per serving. Is there any hope for a 54-year old T-1′er who would like a snort of Christian Brothers Pale Dry Sherry at about that same time of the day? If you trade one craving for another (and one with no sugar), that might help.  :-) The above-mentioned beverage measures zilch on sugar, and in a four- ounce glass has only about 110 calories from the alcohol, which is a great improvement over eating chocolate ice cream. Since it is KNOWN magnesium is excreted at night .. and since chocolate is high in magnesium .. maybe try another magnesium rich food .. which is NOT high in sugar..? (nuts-cashews and almonds especially) whole grain .. green leafies .. and legumes .. maybe a burrito? Or maybe an epsom salt bath .. Who loves ya. Tom ”munchies”. I can relate to the Sherry, except my choice is Peppermint Schnapps in of course, hot chocolate!!! I can’t seem to win on the ”chocolate” craving, but I might find something else to replace it if I keep looking hard enough..
